Terroir
Sandy loam and limestone soils. South-facing vineyard. Located just 2000 meters from the sea and with strong exposure to the north wind from Monchique.
Pairing with food
Cheeses, sausages, red and white meats, sardines.
Vintage
Manual and night harvesting. Destemming and crushing followed by 48-hour cold maceration. Slow fermentation at controlled temperature for 15 days. Very gentle crushing and pressing. Aged for 18 months in vats followed by 12 months in bottle.
Conservation
The bottles must be protected from sunlight, without oscillations or vibrations, in a completely or partially horizontal position, with the wine in contact with the cork, in a cool place (between 10 and 15ºC)
